This chicken recipe is oh-so-easy but tastes terrific.
few tablespoons olive oil
1 large onion, chopped
3 large cloves garlic, crushed or finely grated
1/8 cup sliced black olives (or 1/4 cup rustic whole olives - a mixture of black, red and green). I have used both pitted and unpitted (but warn people if unpitted). If you don't like olives, just use a little less but I find that they add flavour and even people that don't like them enjoy them in the dish.
1/4 to 1/2 cup chopped oil packed sun-dried tomatoes (depends on how much you like them - I usually do about 1/2 cup - the best place in New Brunswick to purchase the sun-dried tomatoes is Costco)
1 large can crushed or diced tomatoes
1/2 tsp dried chiles or a squirt hot chili sauce (the Chinese stores have several execellent hot chili sauces)
1/2 tsp dried oregano (or 2 tsp fresh)
1 - 2 tablespoons balsamic vinegar (I usually do 2 tbsp)
salt & pepper
8 skinless, boneless chicken thighs or 4 breasts or mixture of both
Preheat oven to 350 F.
Heat oil in a large saucepan. Add onions and garlic. Cook 5 minutes. Add olives, sundried tomatoes, tomatoes, chiles, oregano, vinegar, salt and pepper. Bring to a boil. Add chicken. You can cook on stove until done. But I usually transfer everything to a covered casserole and put in the oven for an hour.
Serve over pasta or rice. Very nice with salad and bread rolls. Recipe doubles nicely.
